More Porridge Please

Oatmeal.  A breakfast classic.

I literally could eat oatmeal everyday…and probably did at some point. Oats are great because they can be made sweet (my favorite) or savory to deliver a satisfying meal. Starting you day with an oatmeal based breakfast can curb hunger, high in fiber and can lower cholesterol. Baked oatmeal is a fun way to create larger quantities of oatmeal and jazz up a classic meal.

Ingredients:

  • 3 cups of oatmeal
  • 1/3 cup brown sugar
  • 1 cup of slice strawberries
  • 1/2 cup sliced bananas
  • 1/2 cup of blueberries
  • 1 cup milk (any milk will work… I use almond milk)
  • 1 egg
  • 1 teaspoon of vanilla
  • 1 teaspoon of cinnamon
  • 1/2 teaspoon of nutmeg
  • 1/2 cup Walnuts (optional)
  • 1/3 cup dark chocolate chips (optional)
  • Coconut Oil Spray

Directions

  1. Heat the often to 350 Degrees F
  2. In a large mixing bowl combine oatmeal and brown sugar. Set aside
  3. Beat the egg add the milk, vanilla, cinnamon, and nutmeg. Mix well.
  4. Pour the egg mixture into the oatmeal mix.  Add fruits
  5. Spray a baking dish with coconut oil and pour the oatmeal “batter” into the dish.
  6. Top with Walnuts and dark chocolate chips (optional)
  7. Bake for 30-35 minutes.
  8. Baked oats can be served immediately.

If there are any leftovers, oats can be refrigerated and reheated up to 5 days after being made.
