Oatmeal. A breakfast classic.
I literally could eat oatmeal everyday…and probably did at some point. Oats are great because they can be made sweet (my favorite) or savory to deliver a satisfying meal. Starting you day with an oatmeal based breakfast can curb hunger, high in fiber and can lower cholesterol. Baked oatmeal is a fun way to create larger quantities of oatmeal and jazz up a classic meal.
Ingredients:
- 3 cups of oatmeal
- 1/3 cup brown sugar
- 1 cup of slice strawberries
- 1/2 cup sliced bananas
- 1/2 cup of blueberries
- 1 cup milk (any milk will work… I use almond milk)
- 1 egg
- 1 teaspoon of vanilla
- 1 teaspoon of cinnamon
- 1/2 teaspoon of nutmeg
- 1/2 cup Walnuts (optional)
- 1/3 cup dark chocolate chips (optional)
- Coconut Oil Spray
Directions
- Heat the often to 350 Degrees F
- In a large mixing bowl combine oatmeal and brown sugar. Set aside
- Beat the egg add the milk, vanilla, cinnamon, and nutmeg. Mix well.
- Pour the egg mixture into the oatmeal mix. Add fruits
- Spray a baking dish with coconut oil and pour the oatmeal “batter” into the dish.
- Top with Walnuts and dark chocolate chips (optional)
- Bake for 30-35 minutes.
- Baked oats can be served immediately.
If there are any leftovers, oats can be refrigerated and reheated up to 5 days after being made.
